Also known as the Garam Masala of the South, Madras Curry Powder is a very popular, fragrant rich blend of spices, and is used in a number of dishes.  

You can use it in preparing a spicy version of potato curry, kuruma, biryani, and gravy dishes.  Use in small quantity, as it is very spicy.
